LOGAN THE SKATER

When you ask Logan what he wants to be when he grows up he will tell you that he wants to be a surfer. Sense we don't have the ocean in our back yard he decided to try out skateboarding. He is so funny I love my little long haired surfer/skater dude :)

Yummy dinner

I made this dinner the other night and it was soooo good and easy. Great for a week night.

CHICKEN FAJITA FOIL PACKETS

1-1/2 cups instant white rice, uncooked
1-1/2 cups hot water
1 Tbsp. TACO BELL® HOME ORIGINALS® Taco Seasoning Mix
4 small boneless skinless chicken breast halves (1 lb.)
1 each: green and red pepper, cut into strips
1/2 cup TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa
1/2 cup KRAFT Mexican Style Shredded Taco Cheese
Make It
HEAT oven to 400ºF. Fold up all sides of each of four 18x12-inch sheets of heavy-duty foil to form 1-inch rim; spray foil with cooking spray. Combine rice, water and taco seasoning; spoon evenly onto centers of foil. Top evenly with remaining ingredients.
BRING up foil sides. Double fold top and ends to seal each packet, leaving room for heat circulation inside. Place in 15x10x1-inch baking pan.
BAKE 30 to 35 min. or until chicken is cooked through (165ºF). Let stand 5 min. Cut slits in foil to release steam before opening packets.

New York

On Labor day We went to New York. We had soooooooooooooo much fun. Grandma and pop-pop Uetrecht were with us. We drove to Newark NJ then took the train from there into NY. We saw so much and did lots and lots of walking. We went to the biggest build a bear store I have ever seen and they had a build a doll right next door. We went to the American doll store and that was really neat. Madisyn LOVED it. We went to FAO Swartz. That was really cool too. So here are some pictures of our trip.

SOCCER AND FUN @ THE PARK

Logan has started to play soccer for the fall season. He should still be playing at the tot level but he is playing at the u-6 level because he told the lady in charge of the soccer program that he didn't want to play boring baby soccer any more. So she moved him up and he is quite good.

BACK 2 SCHOOL SCAVENGER HUNT

Before the kids went back to school I decided to do one last fun thing. We had a scavenger/treasure hunt. I wrote clues on paper apples and the things they needed to find. It was a lot of fun. We ended with cupcakes. With cookie chalk boards and a candy apple. They were yummy!!!!
